While we usually talk about different storage options, Easter is almost here, so we thought it would be a nice change of pace to talk about something tasty that you can put into those cupcake boxes we are always discussing.. No Easter meal would be complete without dessert and cupcakes are the perfect choice. Kids love to eat them and adults enjoy looking at them. The treats can even be placed in cupcake boxes and taken home to eat later.
Lambs, eggs, and chicks…all are associated with Easter, but none of them are as synonymous with the holiday as the rabbit. Here is an easy recipe for bunny face cupcakes that you can whip up in less than an hour. Everyone will love the result and no one will realize that it was simple to create.
• 1 box vanilla or classic white cake mix
• 3 eggs
• 1 1/3 cups water
• 1 cup sweetened flaked coconut, finely chopped
• 1/3 cup vegetable oil
• 2 teaspoons coconut extract
• 2 12-slot muffin tins
• 24 paper muffin or cupcake liners
• Container of white icing or cream cheese icing
• Shredded coconut for top of cupcakes
• Pink decorator’s sugar
• 24 large marshmallows
• 48 miniature marshmallows
• 72 jelly beans
• Decorating gel (optional)
• Spoon
• Electric mixer
• Wire racks
Step 1: Preheat your oven to 350 degrees Fahrenheit. Line the muffin tins with paper liners. Set aside.
Step 2: Mix cake mix, oil, water, coconut extract, and eggs in a bowl with an electric mixer set to medium speed. Continue mixing until smooth and moistened. Stir in chopped coconut. Pour equal amounts of batter into each muffin liner.
Step 3: Bake muffins about 15 to 18 minutes or until they spring back when lightly touched or a toothpick put into the center comes out clean. Transfer the muffins to the wire rack to cool.
Step 4: Frost cooled cupcakes with the icing. Sprinkle shredded coconut on top for bunny fur.
Step 5: Cut the large marshmallows in half widthwise. Slightly squeeze each half to create an oval shape.
Step 6: Use the pink decorator’s sugar to decorate the sticky side of each marshmallow half, creating the bunny ears. Set the ears in place on the cupcake icing.
Step 7: Add three jelly beans to the top of each cupcake to form the bunny eyes and nose. Use the same colors for the eyes and a different color for the nose.
Step 8: Place two mini marshmallows on each cupcake to make the bunny cheeks.
Step 9: If desired, use decorating gel to create bunny whiskers and eye pupils.
Step 10: Put the treats into cupcake boxes and hand them out to the kids!
